Here at Southern Star Downs we raise both Angus and Wagyu Beef Cattle. Angus Cattle are a very common beef cow due to the fact that they are naturally polled (no horns) and usually have a laid back temperament. Most store bought beef is Angus. Some common traits of Angus beef are modest to high degree of marbling, medium to fine marbling traits, less than 1,000 pounds of carcass weight and moderately thick or thicker muscling. Angus meat has 75% unsaturated fat to 25% saturated fat. It makes great ground beef and skirt steaks and you can usually get a few good cuts of steak out of a steer. Our farm-raised meat is unmatched by what is sold in stores these days. The taste and quality of farm-raised, natural meat can be tasted in every bite.
Wagyu beef, on the other hand is quite the opposite. There is no beating the quality of meat that comes from the Wagyu Breed. They are not naturally polled, but have an equally good temperament as Angus Cattle. It is said that Wagyu beef is better for you than any other beef due to the 75% saturated to 25 % unsaturated ratio. There is an increased percent of genetic factors in Wagyu beef that control the fatty production, making the beef more healthy for you. The taste and marbling of Wagyu meat is amazing and anyone that has not experienced the difference should make a point to give it a try. They do take longer to finish, but the wait is well worth the time and effort.
Lastly, we raise Miniature Jerseys on the farm for milk purposes. Mini Jerseys are the ideal homestead cows because they put off enough milk for about 2 families on a weekly basis. We are a small farm and are not interested in selling wholesale milk. However, we are interested in drinking natural, hormone free milk. It is for this reason that we raise our dairy cattle. Miniature Jerseys have a wonderful temperament and are very easy to work with.
